Salmon Cakes

This is a very quick post to share a recipe that I really enjoyed today!


1 egg

1 x 200g can of Salmon – do not drain

1 TBSP Coconut Flour

1 pinch of dill

1 pinch of sea salt

1 pinch of black pepper

Preheat oven to 400F (220C).  Whisk the egg with a fork quickly, mix in the whole can of salmon (including the water) and mix.  Stir in the coconut flour, salt pepper and dill and mix well.  Using heaped tablespoon of the mixture form into balls and then flatten onto a baking tray lined with grease proof paper.  Bake for approx 8 mins.  Turn and bake for another 8 minutes or until golden

I wasn’t planning on posting this recipe yet so please excuse the completely unstyled photo – this is the one I snapped before I gobbled them up with some yummy homemade mayo, mustard, broccoli and half an avocado – YUM!
