Creamy Coleslaw


Again I apologize for my terrible photography!  If you name a prettier version take a photo please!

This is delish though despite my bad picture!  I make a big batch and it keeps at least 4 days (we’ve never had any left longer than that to test it!  Even my picky 2 yr old loves it!)

Finely slice half a red cabbage and half a white cabbage (or a whole of either)
Grate 5 medium carrots
Chop 6 spring onions
Mix all together in a large bowl.

In a separate container mix
1/2 cup of apple cider vinegar
4 tablespoons of Greek yogurt (or home made mayo)
A teaspoon of Italian herbs
A grind or two of salt and a grind or two of black pepper

Pour over veg, mix well and serve.  Store the left overs in an airtight container in the fridge.
